Building A System - Suggestions?

I have been researching new components and want to spec/price a new build for my everyday computer. I don't do many games, but I do a lot of photo editing working with raw images that are close to 100mb each in photoshop. I use an older version of photoshop but would like to use one of the newer versions which takes more system resources. My system has been slowed down when I have photoshop and browsers open.

Here's what I put together so far:

Intel Core i7-4770 processor quad-core
Intel B85 motherboard (gigabyte) or Biostar motherboard
Kingston DDR3 1600 RAM - 8gb
GE Force GT630 video card - 1gb DDR3 memory, pci-express 2.0

I'm planning to upgrade to windows 7 64bit. Should I stay with 8gb of ram, or go with 16gb?

I also need a new drive to put my o/s and system on. I'm thinking of conventional or solid state. I've heard that SSDs are faster but is there really a performance difference between the SSD and a hard drive with SATA6 interface?

Also, how much do I need in a power supply for this type of system?
