Solved: Help please new system build hard drive configuration questions

Trying to build up a gaming pc for my son. He wanted to play space engineers but his system was not fast enough and mine just about ran it. Decided he is older and his pc needs to be more up to date.
In the past I built my son a pc with one hard drive and ghosted a back up copy to another drive so I can just swap them out when he completely stuffs up his system (and yes he does and I don't know how he does it).
Things have changed so much over the years and when trying to decide the best way to set up the hard drives I have reached a block.
Im on a budget and have already gone way over, this is what we have:

Asus Z87-K Intel Motherboard (support 6xsata 6.0 gb/s ports with RAID 0,1,5,10)
Integrated Graphics Processor
Multi-VGA output support : HDMI/DVI/RGB ports
- Supports HDMI with max. resolution 4096 x 2160 @ 24 Hz / 2560 x 1600 @ 60 Hz
- Supports DVI with max. resolution 1920 x 1200 @ 60 Hz
- Supports RGB with max. resolution 1920 x 1200 @ 60 Hz
Maximum shared memory of 1024 MB

Intel Core i7-4770K S1150 3.5GHz 8MB Haswell Quad Core Processor

Corsair 32GB (4 x 8GB) Vengeance Pro Gold DDR3 2400MHz CL11 Memory

Windows 7 sp1 64bit (os)

2x Seagate 1TB Barracuda SATA 6Gb/s 64MB 7200RPM Hard Drive


Putting it together was the easy bit as things in that respect have not changed dramatically
Im already guessing that the on board graphics will probably need upgrading to a card but will have to wait a month to be able to afford it.
The motherboard gives me the following sata configurations options
ide, ahci, raid
This is where I would like some help if someone can, I'm at a brick wall as I'm not sure the best route to go. Correct me if I'm wrong but the ide options is old hat and will restrict the systems performance. The ahci is for older operating systems and windows 7 encounters problems with this. Raid is for 2 drives or more.
So I'm guessing RAID would be the better option.
Raid 0 splits the information between the 2 drives and raid 1 can do this but can also mirror the drives but at the cost of losing the amount of space from 2 drives to 1.
would the best option be raid 1 mirrored?
also when installing and registering the os is completed, could I ghost the os to a third drive so when he stuffs up the os I can format both installed drives and ghost the original information back on to 1 or both the installed drives to get the system up and running like the fresh install ie exactly as I had ghosted
How do the different options (ide, ahci, raid) affect gaming?
which is the best option of the hard drive configurations (baring in mind he will stuff up the os)?
Sorry so many questions but I'm a little out of my depth as I have not kept up with the changes over the years
